  • 2 tbsp bearnaise sauce
  • 1 tbsp. Dijon mustard
  • 1/2 peeled and cut red onion into rings
  • cleaned and shredded lettuce
  • tomato slices
  • sliced cornichon
  • pepper

Season the beef with pepper but not salt; salt sucks out the fluids and toughens the flesh! (You can add salt if you need to at the end.).
Form the minced meat into two patties/burgers with wet hands.
Cook the burgers to your taste, remembering to melt the blue cheese on top right before serving; toast the burger buns or French bread.
Assemble your burger in the following order: bottom bun: lettuce, tomatoes, Bearnaise sauce, and burger with melted blue cheese.
