  • 500 grams of potato mash
  • 2 cooked small-pieced chicken breasts
  • 4- to 6- cooked leeks
  • 50 g of cooked ham diced
  • 2 to 3 tablespoons of cream or 3 to 4 teaspoons of creme fraiche
  • 0.5 tsp. of blended herbs
  • salt

  • 1 egg slightly beaten
  • milk

Preheat oven to 200C/400°F.
The pie dish should be greased and lined with baking paper.
Mashed potatoes, leeks, poultry, ham, crème fraîche, and seasonings to taste should all be combined. Place to the side.
The crust should stretch over the edge of the pie plate as you roll it out to cover the bottom.
Put your filling into the pastry pie case - and sit your blackbird or pie funnel in the middle, pushing it down slightly so it is not too high.
Create a raised crust all the way around by turning back the pastry edges. Add the beaten egg and milk mixture to the pie crust to dampen it.
Roll out the dough for the lid and gently slide it on, cracking OR poking a hole for the blackbird to fly through.
Turn the pastry lid's edges back and, if required, use a fork to assist you in precisely crimping the top and bottom together.
Bake for about 45 minutes in the preheated oven after brushing the top with the beaten egg and milk glaze.
