  • Ingredients required 11 items


  • 2 Cups sugar
  • 13/4 Cups flour
  • 3/4 Cup baking cocoa Dutch process or dark cocoa preferably
  • 11/2 Teaspoons baking powder
  • 11/2 Teaspoons baking soda
  • 1 Teaspoon salt
  • 2 Eggs
  • 1 Cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 3/4-1 Cup boiling water see note below


Directions to prepare 10 steps
Heat oven to 350 F.
Prepare one 13x9-inch pan or two 9-inch round baking pans with butter and flour.
In a large mixer bowl, stir together dry ingredients.
Add the eggs, milk, oil, and vanilla, and beat for two minutes at medium speed.
Hand-stir the thin (the batter will be boiling) water in.NOTE: I tested it using 1/2 cup,  
2/3 , cup and 3/4 cup boiling water and we prefer it with less than 1 cup of water. I usually 
use between 2/3 & 3/4 cups. The cake is still very moist but it doesn't seem to "fall" as 
how much it cools. This might be related to our high humidity, a particular flour brand,
or something else. I'm not sure if it will work for everyone because of many circumstances.
Pour into prepared pan.
For circular 9-inch pans, bake for 30 to 35 minutes. For rectangular pans, bake for 40 to
50 minutes, or until A wooden pick put in the center is cleanly removed. (Avoid using 8-inch
pans; the batter will stick. overflow.).
I typically grab the 2/3 full ones because they tend to overflow if you fill them much higher.
27 to 28 cupcakes per batch, roughly. Bake for roughly 18 to 20 minutes.
Cool for 10 minutes, remove from pan to wire racks.
Please be aware that baking cocoa is not a hot chocolate mix! Cocoa for baking is available in the baking section and has no added sugar. This recipe does not work with chocolate drink mixes that you add to milk or water to drink.
