  • Ingredients Required 13 items

  • 0.5 lbs of ground sirloin
  • a half-pound ground chuck
  • 12 pounds of ground lamb
  • 4 salt teaspoons
  • 1/8 teaspoon ground peppercorn mixture
  • 1 avocado Hass
  • 1 tablespoon minced white onion
  • 1 tablespoon minced garlic
  • 1 tablespoon finely chopped jalapeño
  • Light olive oil 1 tablespoon
  • 6 thick-cut slices of hickory smoked bacon
  • Peanut butter 4 tablespoons
  • Kaiser rolls four

Directions to Prepare
Place the meats in a medium glass or stainless steel dish, breaking them up as you do so that they form a large, loose mound.
Add the ground pepper and the remaining 3/4 of the salt, and mix by hand just until combined. Avoid pounding the flesh too tightly; the advantages of a loose patty will eventually become obvious.
Make four equal portions. Press the meat into the molds if you have 6" round molds. If not, shape the meat into patties by lightly pushing it together to keep it together.
The patties should end up being approximately 1/2" thick. Make time for resting.
If you can't get a Haas avocado, a Florida avocado will work but won't have the same flavor because of the reduced fat content.
Peel and pit the avocado. Place in a small food processor after being chopped into bits.
Add the remaining salt, along with the garlic, onion, and jalapeno. Blend until a loose purée forms.
Scoop into a bowl of the proper size, cover tightly, and put in the fridge.
Cook bacon and properly drain. If you have a broiler pan, laying cold raw bacon on a cold broiler pan, placing in a cold oven on the middle rack, and then turning the broiler, will make oven frying less fatty and more uniform.
We can thank Alton Brown for sharing that little secret. This method works by gradually raising the temperature, rendering off the majority of the fat before the bacon reaches crisping temperatures.
Observe the bacon closely! It may change in under 15 seconds from rubbery to black!
On a flattop, electric skillet, or cast iron skillet, cook the hamburger patties at 375°F or medium-high.
Grilling them is not advised since the loose patties may break apart on the grate and become charcoal, which is delicious but not ideal for this dish.
Cook for 4–5 minutes on each side, turning only once, until browned and caramelized.
Slice and toast rolls in a toaster oven while the burgers cook - or in the residual heat of the broiler after the bacon has been cooked - and spread the bottom of each with a tablespoon of peanut butter.
