Add softened gelatin, soy sauce, and baking soda to the food processor's bowl along with the remaining 1/2 cup (or 3 ounces) of ground turkey.  About two minutes of smooth processing, scraping down the bowl as necessary.  Oil should be progressively added while the food processor is running for about 10 seconds; keep the paste within.  Return the paste-coated mushrooms to the food processor and pulse three to five times to incorporate, pausing and redistributing the mixture as necessary to ensure even mixing.  Use your hands to properly blend the ground turkey and the mushroom mixture in a bowl.
Make 6 balls out of the meat mixture using lightly oiled hands.  To ensure equal cooking, press a small depression into the center of each burger and flatten into 3/4-inch-thick patties that are about 4 inches in diameter.  For a month, shaped patties can be frozen. You can cook frozen patties directly from the freezer.
For a charcoal grill, fully open the bottom vent.  Light 6 quarts of charcoal briquettes in a large chimney starter.  Pour evenly over the top half of the grill when the top coals are just slightly obscured by ash.  Put the cooking grate in position, close the lid, and fully open the lid vent.
