  • 1 tablespoon blue cheese dressing plus additional for garnish
  • 1 teaspoon chives
  • 1 cup bulgur
  • divided 3/4 teaspoon salt
  • 1 cup of hot water
  • 8 ounces white mushrooms stems clipped, wiped clean, and diced (brown mushrooms may be substituted)
  • 1 cup chopped wild mushroom mixture optional
  • 1 cup finely chopped onion
  • 1 tsp. minced garlic
  • 1 tbsp. balsamic vinegar
  • 1/2 cup chopped pecans
  • 1 big lightly beaten egg
  • 1/2 cup fine dry breadcrumbs Italian flavored breadcrumbs work well
  • 1 tablespoon Italian seasoning or 1/2 teaspoon Greek seasoning
  • pepper freshly ground

Directions to Prepare
In a small mixing bowl, combine the yogurt, blue cheese, chives (if using), and dressing to produce a chunky sauce.
Refrigerate it while you make the burgers; it will stay in the refrigerator for up to 2 days.
In a small bowl, combine bulgur and 1/4 teaspoon salt. Pour in the boiling water, cover, and set aside for 20 minutes, or until the water is absorbed.
Using a strainer, drain the surplus liquid.
Meanwhile, coat a large nonstick skillet with cooking spray and heat over medium heat on the stove.
Cook, stirring occasionally, until the mushrooms, onion, and remaining 1/2 teaspoon salt are cooked, 8 to 10 minutes.
Mix in the vinegar and garlic. Transfer the mixture to a platter and set aside for 30 minutes to cool to room temperature.
In a food processor, combine the vegetable combination and pulse quickly until finely chopped.

It took 8 minutes for mine to crisp slightly and cook thoroughly.
You may alternatively cook them in a frying pan for 4 minutes per side (my broke apart doing this, which is why I broiled the remainder of them).
If desired, garnish the burgers with watercress and blue cheese sauce.
