  • Ingredients Required 16 items


  • two cups of hot water
  • 1 1/4ounceactive dry yeast in a packet
  • 1 teaspoon each of salt and sugar
  • 6 to 7 cups of all-purpose flour
  • two teaspoons of olive oil
  • Olive oil 1 teaspoon
  • Fresh hot Italian sausage 1/2 pound (in casing)
  • thinly sliced 1/2 lb. capocollo ham an Italian cold cut that has been cured and spiced
  • genoa salami cut thinly, 1/3 lb.
  • 1/3 lb. of thinly sliced pepperoni
  • 1 Ib fresh cheese in a basket
  • 1/2 lb. of thinly sliced mozzarella cheese
  • 8 beaten eggs and 4 hard-boiled eggs will make up a dozen.
  • minced fresh flat leaf parsley 1/3 cup
  • fresh black pepper ground, 15 to 20 cranks
  • For egg wash beat 1 egg with 1 teaspoon water.


In a large bowl, dissolve in 2 cups of warm water, yeast, sugar, and salt. Using a spoon, gently blend.
Start by adding 2 tablespoons of olive oil and 5 cups of all-purpose flour. Just combine with
a spoon until the dough begins to form, then move the dough with your hands to a floured surface.
Knead the dough thoroughly, adding flour if it's too sticky until it becomes smooth and springy.
A good 5 to 10 minutes of vigorous kneading should be required. When finished, it will be silky.
Place the dough ball in a large, clean bowl coated with olive oil and rub some olive oil on top
of the dough. Cover with a clean, dry dishtowel and let rise in a warm,draft-free area until
doubled in size (at least 2 hours).
Meanwhile, fill a large heavy-bottom saucepan halfway with water. Bring to a light, rolling boil,
and place 4 room-temperature eggs in the water. Maintaining a light, rolling boil, cook them for
18.5-20.0 minutes. Remove the eggs with a slotted spoon, place them in a colander, and run them under cool water
.Tap the eggs against the countertop to crack the boiled eggs under the water. slice thinly
and set aside.
Over medium heat, warm 1 teaspoon of olive oil in a large skillet. The sausage should be taken out of its
casing and added to the pan. Cook for 5 to 6 minutes, or until browned and crispy. Transfer to a
small bowl and set aside.
Place the oven rack in the center of the oven and preheat to 350 degrees. Brust the inside surface of a 10-
inch-by-3-inch spring form pan with olive oil.
Once the dough is risen, Punch it down to release air bubbles. Transfer dough to a lightly floured
surface, divide in half and roll one half into a 12-inch round. Transfer the dough to the spring form
pan. Using your hands, fit the dough snugly in the pan, gently stretching it to hang 1 inch over the edge.
In a medium bowl, whisk together the 8 eggs, parsley, and black pepper.
Alternating layers of dough should be placed inside the dough.
